My favorite chocolate bar of all time is Cherry Ripe. I can’t go past the rich dark chocolate and the gooey cherry / coconut centre. Devine! I can’t remember the last time I had one and I all of a sudden got an intense craving for one yesterday.
After milling about my kitchen trying to make the craving go away I remembered – I have dark chocolate! I have cherries! And by god, I’ve got coconut! And from that, this delightful, antioxidant heavy dessert was made.
Note: 10 cherries comes to a total of 200 calories. Multiply recipe below to make more to share!
Ingredients
25g dark chocolate
10 ripe cherries
2 tsp of desiccated coconut
Break up the chocolate into small pieces and place in a microwave-safe bowl. Microwave in bouts of 30 seconds until completely melted.
Dip cherries into chocolate and sprinkle a little desiccated coconut on each.
Place cherries on a plate covered with baking paper and put in fridge for at least 30 minutes.
Once the chocolate has hardened they are ready to DEVOUR!

I love these – what a great idea!
Delish. Possibility of subbing out the cherries for…more chocolate?
Merry Christmas woman!
